Vinification: The grapes are destemmed, placed in vats and cooled at 12° for 5-7 days (cold maceration) to extract the primary aromas. Then, under the action of the yeasts naturally present in the grapes (ingenious yeasts), the alcoholic fermentation is carried out.
begins. The temperature is monitored daily.
Maceration lasts between 15-20 days with rare punching down (just to break the preferential paths of the grape juice) and several pumping over per day (depending on the progress of fermentation).
The choice to limit pigeage in favor of pumping over allows us to extract the tannins more gently in order to obtain wines with delicacy and finesse.
Gentle extraction respecting the grape variety, the terroir and the vintage.
Abuse of alcohol is dangerous for your health, please consume in moderation.
