Of the 6 hectares of the Domaine de la Soufrandise, all the vines are located in the commune of Fuissé in the heart of the Pouilly terroir in the Mâconnais region, 4 hectares are devoted to the Vieilles vignes cuvée, the house's highest quality vintage. The vines, aged from 35 to 80 years old, are spread over the best terroirs of the appellation (Menestrières, Champs et Prasles, Gaillard, Perrières, Chevaux) which gives the wines power, race, elegance and finesse.
Between 35 and 40% of this cuvée, depending on the vintage, is aged in pieces of wood for 9 to 10 months on the lees, after a long and slow temperature-controlled fermentation. Let nature do its best to let the character of the terroir express itself, is the doctrine of Nicolas and Françoise Melin who have presided over the destiny of the estate for 25 years.
These Pouilly-Fuissé Vieilles Vignes are ready to drink as soon as they are young because they have a good structure, and their ageing potential is evaluated around 5-6 years. Having drawn their characters from warm soils, they evolve towards honeyed and roasted notes, typical of the chardonnay blossoming on these terroirs of southern Burgundy. A sure value to accompany noble fish and poultry, goats and comté cheese.
Nose: intense which combines white flowers with more mineral and grilled notes. Balanced palate with a finish shared between mineral and woody.
