Manual harvest, only in small crates to prevent oxidation. The bunches are then sorted manually. Destemming and light crushing at 8°C to avoid color extraction. Free run juice and press juice are vinified together in stainless steel tanks at low temperatures.
Low production between 32 hl/ha and 38 hl/ha depending on the year.
Tasting notes :
Brilliant robe, rather pale, salmon pink, exotic and mineral nose, with notes of orange peel and angelica.
Fruity attack in the mouth, followed by notes of roasted almonds and spices.
Tasting advice :
It will go wonderfully with grilled fish as well as Provencal dishes such as bouillabaisse, anchoïade, ratatouille and stuffed vegetables.
Serving temperature :
Serve between 9° and 12° C
On-call time :
This wine will keep between 1 and 5 years.
Grape variety :
Grenache 20% , Cinsault 20% by direct pressing.
Mourvèdre 60% by bleeding.
Age of the vines :
20 to 60 years old
The vine is worked as naturally as possible without the use of chemical or synthetic products.
A pure soil allows us to obtain a grape that has taste!
