Considered as the new star of the rosé wines, the Whispering Angel wine of Château d'Esclans is produced by Sacha Lichine and Patrick Léon, oenologist for 27 years at Mouton Rothschild. Dating back 2500 years ago, traces of vines have been found and the site was used by the Gauls as an observation post for ships arriving in the Gulf of Fréjus. From the steep slopes of the vineyard near the Gorges de Pennafort, the view plunges down to the shores of the Mediterranean. Bought in 2006 by the owner of Prieuré Lichine in Bordeaux, Château d'Esclans, in the purest Tuscan style, dates back to the 19th century. Its cellars, on the other hand, have remained intact since the end of the 12th century, when the original château belonged to the Count of Provence, then to Gérard de Villeneuve, heir of a rich family from Marseille. The latter had acquired ownership of all the land in the Esclans Valley. Later, these wine lands were parcelled out and then belonged to various families, until Sacha Lichine decided to make a Provencal nugget out of them.
Today made up of 267 hectares, 72 of which are vineyards, Château d'Esclans is located in the heart of the Var, the flagship region of rosé. The main grape variety is Grenache, followed by Rolle, Cinsault, Syrah and a little Tibouren. The highest vines on the hillsides are the oldest, offering more concentrated grapes. Some Grenache plants are up to 90 years old!
The grapes are harvested manually, in small crates. Two sorting operations are carried out, at the time of picking, and then by optical sorting. After a lowering of the temperature to 8 degrees, the pressing and the vinification take place and finally the assembly of the Whispering Angel, meticulously realized by Sacha Lichine and Patrick Léon.
The result is a very fine wine, combining fruitiness and freshness, whose color is pale pink, almost transparent. On the palate, it offers the subtle blend of red fruit aromas (wild strawberry), pink grapefruit and white flowers. On the nose, there are notes of butter, toasted brioche and hazelnut.
It is ideal as a starter or a main course, with fish, poultry and ratatouille.
