Before 1998, the year Château Pavie was bought by the Persian family, the quality of the wines produced was not quite up to the standard of this exceptional terroir; this is why the estate did not enjoy, at the time, the same reputation as its alter egos. Thus, already owners of Pavie-Decesse and Monbousquet, the Persians undertook important investments, guided by the desire to perfect their production. By virtue of this now unquestionable qualitative renewal, the recent vintages of the estate are today a real commercial success, especially among lovers of new oak and its range of aromas: vanilla, cinnamon, roasting, undergrowth, etc... The Pavia vineyard is the most extensive of all the Saint-Emilion 1st Growths and also has the oldest vines in the appellation, some of which have already exceeded a century. Made from low yields (28-30 hl/ha) and hand-picked grapes, the wines of Pavia are aged up to 24 months in new oak barrels. Rather closed in their youth, they require seven or eight years in the cellar before releasing their powerful aromatic bouquet: cherry, blueberry, blackberry, prune, roasted coffee, oak wood After a lively attack in the mouth on powerful but very fine tannins, the whole is distinguished by a magnificent richness and persistence.
