Name: Saint-Emilion AOP
Cuvée: Château Pavie
Classification: Grand Cru Classé
1x Jeroboam 300cl
In 2015, the blend is composed of 60% Merlot, 22% Cabernet Franc and 18% Cabernet Sauvignon, and the wine has been aged in 80% new French oak. Dark garnet-purple, Pavie 2015 still displays some of its initial maturation in the mouth, giving way to a glorious nose of crushed black cherries, blackberries with notes of dried roses, candied tea, tobacco leaves and garrigue. The mouth is rich, concentrated and full-bodied with an incredible structure with very firm and ripe tannins and a racy line. The freshness slices through dense layers of fragrant black fruits and salty notes, finishing with an epic length.
Comments of the Castle
If there is one undeniable truth, it is that it is necessary to have a great terroir to produce a great wine. Located on the southern slope of the town of Saint-Emilion on a friable white limestone soil and a thicker clayey limestone subsoil, Château Pavie offers Merlot its preferred terroir. The wines have a velvety texture, a lot of suppleness and a warm taste. In its youth, it offers us aromas of morello cherry, plum and oak, while as it ages its aromatic palette declines more evolved flavors: tobacco, cedar and roasted hazelnut.
