New wood for 15%, the rest of the wood is one year old, two years old and more.

Triple sorting: in the vineyard (twice) and in the winery on a vibrating sorting table.
The grapes are destemmed, put in vats and cooled at 12° for 5-7 days (cold maceration) to extract the primary aromas. Then, under the action of the yeasts naturally present in the grapes (ingenious yeasts), the alcoholic fermentation begins. The temperature is monitored daily. The maceration lasts between 15-20 days with rare punching down (just to break the preferential paths of the grape juice) and several pumping over per day (depending on the progress of the fermentation).
The choice to limit pigeage in favor of pumping over allows us to extract the tannins more gently in order to obtain wines with delicacy and finesse.
