The wines offer a beautiful fullness. The tannic structure is not too marked. The Côte de Nuits shows a beautiful intensity and maturity as well as a slower evolution than the Côte de Beaune.

The site: small square, tiny portion of the Coast, the Griotte-Chambertin is there, before your eyes, in the middle of the Grands Crus of Gevrey-Chambertin. Less than three hectares, but within these limits, a mysterious phenomenon occurs.
History & tradition: one tends to think of the Morello cherry about this wine. It is part of the aromas it develops, yet the name comes from Criots (as in Criots-Bâtard-Montrachet) which refers to a hard limestone soil. The Cr sound comes from the same root as chalk. Etymology and geology meet.
Soil: thin and shallow with red-brown earth.
Surface of the Domaine : 0,52 ha.
Average age of the vines: 27 years.
Organic cultivation since 1990, then biodynamic a few years later.
Plants: resulting from our massal selection, raised in our own nursery, but also from recognized qualitative clones.
Soil maintenance: the soil is fed with compost of manure and white wood, sometimes with Guanos. They are ploughed either mechanically or by horses to contain the herbs.
Treatments: only products authorized in organic farming: infusions and decoctions of plants, sulfur and copper, rock powders. We preserve natural predators.
Planting density: from 10,000 to 12,500 plants/ha to explore in depth the intimacy of our terroirs and reduce the production per vine.
Yields: we aim at the former base yield, i.e. the current authorized yield minus 20%.
Harvest: manual in small pierced crates to preserve the integrity of the fruit.
Sorting: in the vineyard and in the winery if necessary.
- 2 to 3 weeks of maceration and vinification in total.

- Temperature of maceration and controlled fermentation.
Joseph Drouhin seeks total control of the extraction process, which gives color and substance but should not be done at the expense of finesse and typicity.
Type: in barrels, 20% of which are new.
Duration: 14-18 months.
Origin of wood: French high forests.
Drying of the wood: the House insists on totally controlling the drying of its wood for more than 3 years, which contributes to the elegance of the wines.
Throughout the process, decisions are essentially made on the basis of tastings, piece by piece. These data are naturally supplemented by technical analyses. As for all the wines of the House, absolute priority is given to the expression of the terroir and the respect of the vintage effect.
